Scope
This standard applies to food nutrition fortifier L-potassium ascorbate prepared from L-ascorbic acid and potassium bicarbonate or potassium carbonate through chemical reaction, crystallization, drying and other processes.
Introduction

1. Background of Standard Formulation

Potassium L-ascorbate is an important food nutrient fortifier, mainly used to supplement vitamin C. In order to ensure its application in food safety, the GB1903.55-2022 standard came into being. The standard was jointly issued by the National Health Commission and the State Administration for Market Regulation, aiming to regulate the production, use and testing of potassium L-ascorbate.

3. Detailed Explanation of Technical Requirements

3.1 Sensory Requirements

Potassium L-ascorbate should be white to slightly yellow crystals or crystalline powder. Inspection can be completed by visual observation, which meets the requirements of A.3 in Appendix A.

3.2 Physical and chemical indicators

Physical and chemical indicators must meet the requirements of Table 2:

  • Potassium L-ascorbate content (dry basis): 99.0~101.0%
  • pH value: 7.0~8.0
  • Total arsenic (as As) ≤0.25mg/kg
  • Lead (Pb) content ≤2.0mg/kg

4. Implementation suggestions

To ensure the effective implementation of the standard:

  1. Enterprises need to establish a sound quality control system and strictly carry out production and testing in accordance with the standard.
  2. It is recommended to use advanced equipment such as high performance liquid chromatograph and polarimeter for testing.
  3. Strengthen staff training to ensure the understanding and implementation of the new standards.
